Century Egg
Known also as preserved egg, hundred-year egg, thousand-year egg, thousand-year-old egg, or millennium egg, the Century Egg is a delicacy in China, where the recipe originated six hundred years ago.
Century Eggs are known for an
exceptionally taste and odor which is reminiscent of sulfur or ammonia;
however, most of the strong smell and taste comes from the yolk. In Taiwan, we
call century egg “Pidan”. It is a duck, chicken, or quail egg that has been
preserved in a mixture of clay, ash, lime, salt, and traditional medicines for several
weeks or even months, depending on the process or method used. Through the process,
the yolk will turn dark green or gray and the white will become a brown,
translucent jelly.
